Program Description

If experimenting with flavours in the kitchen and the ability to work anywhere in the world appeals to you, exploring the culinary arts might be what you are looking for. The one-year program incorporates current business management training into practical learning. While much of the program takes place on campus, some extends outside of the classroom and on-site kitchen. As the year progresses, you will become confident and competent as you experiment with a variety of ingredients and flavouring, while acquiring cooking techniques that can be used anywhere. You will go behind the scenes to explore local food resources including: working with local organic farmers, digging clams, smoking salmon and scouring the forest for wild mushrooms. Career Possibilities

Upon graduation, students will have over 900 hours of hands-on culinary training as they develop food preparation and professional kitchen operation skills - including a work term at an approved location. Graduates are trained to work in institutions, cruise ships, catering, hospitality supply companies, hospitals, convention centres, hotels and many other culinary-related businesses. According to a 2007 survey, there is a 100 percent employment rate for graduates.
